Taste of Thai: Chicken Satay

Summer is just around the corner and you and the kids are tired of the same ol’ dinner. Hamburger Helper, Ramen Noodles and the old standby, Popeyes Chicken and Biscuits! Let me get a 2pc Spicy White! LOL! Seriously, when was the last time you experimented on a new dish in the kitchen? Well, it’s time to try!
One of my favorite light meals is Chicken Satay. It’s orginis are in Indonesia, but it’s very popular in Malaysia and Thailand. Skewered meets like beef, pork and my favorite, chicken, make up the delicacy. Tastes of tumeric and curry plus coconut and a peanut sauce equals yummy in my tummy! Just make sure you got some PeptoBismol on hand…SistaGirl has some digestive issues!! LOL!
- 1½ lb chicken breast, cut into 1-inch thick cubes
- 2 stalks lemongrass
- 1 tsp sliced fresh turmeric, or ¼ tsp dried
- 1 Tbsp roasted peanuts
- ½ tsp cumin seeds
- ½ tsp coriander seeds
- 4 finely chopped shallots
- ¼ tsp cinnamon powder
- 1 Tbsp cooking oil
- 1 tsp sugar
- 1 tsp salt
- 30 to 40 bamboo skewers
- 1 big onion, cut into ¾ inch cubes
- 1 big cucumber, cut into quarters lengthwise and then into medium slices
